Hello all foodie and chefs...
It is really difficult to stop myself to participate in the contest. This week's theme is carrot and it is not a season for carrot in India as it harvested in winter and this is summer now. But I remember a exotic variety of carrot is always available in the market so I found that in one supermarket and bought to participate in the contest.
I decided to prepare something from the carrot which I never prepared before i.e Carrot Fudge or can Carrot delight.

This soft and chewy carrot sweet is not only easy to prepare but also delicious and satisfying.
Ingredients
- Carrot 1/2 kg
- Sugar 1/2 cup (I used little less than 1/2 cup)
- Corn flour 1/4 cup
- Desiccated coconut for coating (Optional)
Procedure
- Clean thoroughly and peel the carrots.
- Cut into small pieces and cook in the steam for 15 minutes.
- Cooldown and make a puree.
- Transfer into a heavy bottom pan or a non-stick pan and add sugar and cornflour.
- Mix well and heat on low flame, stir continuously.
- Add 1 tsp oil/ vegan ghee.
- Cook till the puree become thick and looks like a lump.
- Transfer it into a tray and let it cool down completely.
- Cut into small pieces and coat with desiccated coconut.
Carrot Delight is ready to serve
