Hello Foodie Steemians, I was inspired by @ngoenyi about her egusi soup prepared with tomatoes to make mine. The taste it turned out was different in a good way, I was amazed, I used less tomatoes because I was scared but I am happy that my knack for trying out new things paid out. At least now I know another method of preparing this soup.

Ingredients

  • Egusi- 2 cups
  • Tomatoes
  • Meat
  • Stockfish
  • Onions
  • Pepper
  • Salt to taste
  • Seasoning cubes
  • Palm oil

Preparation Steps

  • First wash your meat and stockfish and put in a pot to cook.

  • Pour some water to your grinded Egusi and allow it to absorb the water.

  • Pick your pumpkim leaves, cut to small pieces and keep aside.

  • Pour out the stock to a dry plate to free the pot or get a dry pot, then pour oil. Add a little salt and leave the oil for 30 seconds then pour in your onions and tomatoes. Fry until the content in the pot is dry of tomatoes water.

  • Scoop your soaked Egusi into the pot and mix with the tomatoes. Then fry together, be careful for Egusi is known to burn easily.

  • Stir properly untill a dough is formed

  • Put in your crayfish, pepper and seasoning cubes and mix properly with the Egusi and tomatoes.
  • Pour in the stocks into the pot, add a 1/2 spoon of salt if there is no taste but be careful not to oversalt the food. Stir and mix well. Allow the mixtures to boil properly.
  • Add the vegatables and boil for 2 minutes. Your soup is ready.

  • Serve with garri or any swallow of your choice.

Soap is one of my favourite food. In Bangladesh it is the season of tomato sauce so we can had committed with 10 cent of price per kg. so I can easily try it as your explain very nicely with step by step photographs and explanation. thank you very much for sharing
