Intro


People used to say that chicken doesn't go well with the pasta. I decided to prove that they are wrong and prepared that delicious and nutritious meal which contain home made quasi pesto served with aromatic chicken breast. The meal is quite time consuming and because of using multiple ingredi nuts cannot be called the cheapest, but it's worth giving it a try. I guarantee that once you will try it, you will be coming back to that meal regularly.

Ingredients (5 plates):


🐔1 kg of chicken breast
🐔2 bunches of spinach
🐔200g of pekan nuts
🐔750g of pasta
🐔250g of cherry tomatoes
🐔150g of mozarella
🐔basil
🐔parmeggiano cheese
🐔lemon chicken spices mix for oven
🐔Lemon
🐔olive oil
🐔 4 cloves of garlic
🐔 soya sauce, salt, pepper


1️⃣ Peel the pekan nuts, chop them nicely for the small pieces. You can use any other type of nuts, I have chosen Pekan because I have the access to the organic nuts directly from the tree. Leave nuts for later
2️⃣ Chop the spinach for a small pieces. Remember to wash it before and remove all the stems. Leave the spinach for later.
3️⃣ Wash and cut into halves all the cherry tomatoes. You may use regular tomatoes cutting them into small cubes, although it will slightly change the taste of the meal so it's not recommended.
4️⃣ Now grate mozarella cheese and leave for later. In the meanwhile you can already set the oven to 180°C to give it some time to warm.
5️⃣ Next ingredient to pre-prepare is the basil. You may just collect the fresh leaves or chop it slightly. Chopping is optional though.
6️⃣ Peel and smash the garlic cloves. If you don't have a smasher at home, chop it into very tiny pieces and mix with the spinach.
7️⃣ Put the chicken into the heat proof bag (make sure it's not regular plastic bag which could melt in the oven), add the spices and juice from one lemon, close it and distribute spices evenly by squeezing the bag in your hands for a while. If you don't have the mix of spices, make your own.
8️⃣ leave the chicken in the oven for 1h in 180°C. At the same time, boil the pasta in salted water, to make it all dente
9️⃣ In the meantime prepare pesto: heat the oil, add spinach, garlic and soya sauce and heat for a while until spinach will get significantly smaller
1️⃣0️⃣ Add cheese, nuts, salt and pepper and heat for few minutes more, mixing well to distribute cheese evenly
1️⃣1️⃣ Ready chicken cut into slices

1️⃣2️⃣ Mix pasta with the pesto, put it on the plate, cover with cherry tomatoes, basil and parmeggiano and put the chicken on the top. Voila! The meal is ready!
