My cousin's sister @piudey once told me to share this recipe, so today I am here with the recipe.
The delicacy is made with eggplant; trust me, friends, it is so delicious. I would request all of you to try this recipe at home.
In India, we make this delicacy, especially in the winter season, the process may differ but almost every part of India people makes this from time to time.
Today I am here to share the process of cooking that I follow. So, without wasting much time let me share with you the recipe.

Tomatoes | 2nos. | |
Onions | 2nos.(medium)finely chopped | |
Garlic | 8cloves(minced) | |

Clarified butter | 1tsp | |
Dry red chilis | 2nos. | |
Mustard oil | 2tbsp | |
Turmeric powder | 1tsp | |

Step 1- Foremost, wash the eggplants and dry them with a clean cloth. Then with the help of a folk prick them. After that, take 1 tsp of mustard oil and rub them on eggplants.
Step 2- Now burn eggplants on medium flame, once done; set them aside to cool.
Step 3- Next, burn tomatoes;
it will help the skin come out easily and also give a smoky flavor. Set aside.
Step 4- Now discard the burned skin of eggplants, and keep them aside on a plate.
Step 5- After that place a wide-mouth vessel on medium flame. Then add the remaining mustard oil.
Once the oil becomes hot, add 1/2 tsp of clarified butter hot, add 1/2 tsp of clarified butter to it. Then add dry red chilis, fry them till golden, and take them out from the oil.
Step 6-Add fried red dry chilies with eggplants by adding 1/2 tsp of salt. Keep them aside.
Step 7- In the remaining oil, add minced garlic, and after a second;
add chopped onions. Fry them till light golden. In between chopped tomatoes.
Step 8- Once onions become light golden, add chopped tomatoes and cook until tomatoes become mashed well.
Now add eggplants and start frying. After 2 minutes, add salt, turmeric powder, chopped green chilies, and remaining clarified butter. Mix all ingredients well, at least for another two minutes.
Step 9- Taste the salt at this stage; if required, add salt. Now add two raw eggs to it. Then incorporate well and fry the sirazi for another five minutes on low flame.
Step 10- Next, add chopped cilantro into it;
and combine well. Now turn off the flame, and the sirazi is ready to serve with rice or rotis.
