Bato-bato is made up of chicken gizzard. These are boiled until soft. it is then skewed, battered and deep fried. Once fried, bato-bato becomes so crispy, perfect for a vinegar dip ( combination of vinegar, sugar, salt , pepper, chili, onion ). This is a famous street food.
Bato-bato is sold for P5.00 only per stick. Sometimes 3 sticks for P20.00. Who would know that this neglected chicken part will become a nationwide click as a street food. Try pairing bato-bato to a cup of rice and you will surely ask for more. I know because I always experience that. When you come to the Philippines try this somewhat exotic yet sumptuous food
