Banana cake
Don't throw away your bananas when they are too ripe.
Turn them into a delicious dessert.

Recipe:
4 ripe bananas.
1 teaspoon of baking soda.
1 teaspoon cinnamon.
1 cup of granulated panela/papelon.
2 eggs.
1/2 cup coconut oil or melted butter if you don't have it.
1 tsp coconut or vanilla essence.
2 cups of wheat flour.
1 teaspoon of baking powder.
Raisins or chocolate drops optional.
Preparation.
Turn on your oven at 180°C, grease your baking pan.
Mash the bananas, add the baking soda and mix, let stand 5 min.
After resting add the sugar and cinnamon, mix until well blended.
Add the eggs 1 egg and mix well before adding the other one.
Then add the coconut oil and mix until it blends well with the dough, then add the teaspoon of essence.
Finally add a cup of flour and the baking powder, mix well and add the last cup of flour, mix well until it is a thick and homogeneous dough.
If you want to add raisins, place them in a cup and add half a tablespoon of flour, stir and then add them to the mixture and integrate in an enveloping way, this will prevent the raisins from going to the bottom and sticking to the mold.
Put your cake in the oven until you insert a toothpick and it comes out dry.
After it is cool, in a bowl add cream cheese, powdered sugar and stir vigorously until well blended, then add coconut essence or the one of your choice.
Add the mixture to the cake and then sprinkle with desiccated coconut.
