Flow is always a problem, but as you pointed out, if the flow is higher, you will empty your tanks. Nice job, and an attractive sink.
The grey water use is wise, and will save you some watering; reducing time spent.

Thanks - I suspect the reduction to 3/8" slows it down a lot, the water has a solid flow with just an open garden hose.
Agreed, but since that is a plus, you are fine!
