How to Make Custard Cookies (Kuih Semperit)
Hi everyone! Today I am going to share a recipe on how to make custard cookies. it is better known as kuih semperit here among the local people. However, I added the term Custard Cookies because Hive is an international platform.
Ingredients
These are the ingredients needed. I will explain each of them under the following images.

2 cups of wheat flour
1 egg yolk (large)
½ cup of icing sugar
1 cup of corn flour
1 cup of custard flour
250 grams of margarine
Cherry fruits cut into little dices
1 teaspoon of vanilla essence/flavouring
Method
First of all, add the margarine into a bowl like this. Then, mix it to make it soft. If you are taking it out of the fridge, then let it melt a little for 15 minutes before starting to make the dough.
Then, add the icing sugar to it and mix them both well.
After that, add the egg yolk.
Add the vanilla essence/flavouring as well.
Mix them all together until it looks like this.
Next, add all of the custard flour into the mixture.
Add the corn flour as well. Mix them well.
Add half of the wheat flour and mix everything well.
Keep adding the wheat flour in small amounts, gradually while using your hands to mould the dough.
Once the texture is no longer sticky and soft, stop adding the wheat flour.
The dough is ready for the piping process of the cookies.
Place a baking sheet on the oven tray and start piping the cookies. The cookies are usually made in flower shape like this. My mother and I did two types of flower shapes.
After that, place a little dice of cherry on top of each cookie like this. Press the cherry dice gently so that it will stay on the cookies after baking.

Preheat the oven for 10 minutes and bake the cookies at 160°C for 25 minutes.
The custard cookies are ready! Since this is the picture of the last batch of the cookies, there is one odd cookie. Can you spot it?
Let the cookies cool for a while and then store them in an airtight container. These cookies are quite fragile so my mother placed a kitchen towel at the very bottom of the containers to prevent them from breaking.
