Garden Comforts
Hi there!
My garden just keeps on giving, featuring plenty of Swiss Chard, Bunching Onions, Brussels Sprouts, Peppers, and Broccoli!
What else could I do but smother them in cheese sauce?
Broccoli Cheddar Soup
This is such a comfort food, it just blows me away that I can actually make it at home like this!
First, I melted butter in the pot, adding garlic and chopped bunching onions.
Adding an equal part of flour to the butter, I whisked it into a roux.
Once the roux was cooked, I poured in the broth.
Next, the broccoli and sliced carrots went in to simmer in the broth.
When they were soft, I added the milk and stirred constantly as it thickened. I blended the vegetables into a chunky mixture and returned them to the pot.
Next, I added heaping handfuls of cheddar, stirring as it slowly melted.
With some paprika, coriander, cumin, nutmeg, and salt, this soup was ready for serving!
Up next! Swiss Chard Potato Casserole
I browned up some pork sausage with garlic and bunching onions, adding the chopped chard stems. When cooked, the leaves went in after them.
Meanwhile, I boiled 5 lbs of peeled potatoes. I greased the casseroles with butter and layered in half the sliced potatoes.
The sausage and chard filling went on top of that, and then I covered it all with the rest of the sliced potatoes.
Time for another roux! I used the sausage drippings and some more butter, plus an equal part flour. To this, I added milk little by little to form a thick white sauce. Of course I once again melted in fistfuls of chedder cheese until satiny.
Poured over the casseroles, the cheese sauce filters all the way down through the delicious casserole. I baked at 375 F for about 50 minutes.

My garden is now pretty well shorn, but new seeds have already been sprouting!

I also planted cold weather peas: snow and snap varieties. I put snow peas around the outside of this tomato cage.
I can't wait for the next wave of garden yums!
