Vegan Lamingtons / Čupavci / Chocolate-Coconut Cubes
fluffy, juicy, chocolatey 😍

As you may already know, I love sweets! I really like dark chocolate (because it contains less sugar and is therefore healthier!) And everything that is made of coconut! This combination is just perfect! These Lamingtons (Australia) also called Čupavci (Balkans) or chocolate-coconut cubes are simply a dream!

My family and friends ate the Lamingtons in no time and nobody noticed that they were vegan! My neighbor told me: “Heidi, they were delicious! You have to do it again! "Ok Petra!

If you don't like coconut by the way - no problem! It can use ground hazelnuts or almonds or just chocolate icing. The chocolate icing keeps the lamintos juicy and fresh!

And now I don't want to put you under torture any longer, here is the recipe:

Ingredients sponge cake

  • 170 g organic spelled flour
  • 30 g organic corn flour
  • 50 g corn starch
  • 2 KL baking powder
  • 1 KL backing soda
  • 50 g whole cane sugar or birch sugar, or whichever you like
  • 1 pinch of salt

  • 300 ml cashew milk or other plant milk
  • 2 tablespoons of lemon juice or apple cider vinegar
  • 30 g butter flavored oil or coconut oil melted
  • 1 tsp vanilla extract

preparation

Sift all dry ingredients into a bowl and mix well.

Mix the liquid ingredients and add to the dry ingredients and mix briefly (!) With the spatula, do not stir too long!

Spread the dough evenly on a baking tray lined with baking paper (approx. 27 x 20 cm) and smooth out. Bake in a preheated oven at 180 ° C for approx. 15 - 20 minutes.

Let the cake cool and then cut into cubes of about 3-4 cm

Ingredients chocolate sauce

  • 250 ml cashew milk or other vegetable milk
  • 200 g dark chocolate or chocolate coating
  • 50 g sugar / birch sugar
  • 40 g vegan butter

  • 200 g grated coconut

preparation

Put cashew milk, sugar, butter and dark chocolate in a small saucepan and heat up on a low heat, stir with a whisk until the chocolate has melted and everything has bonded well.

Place the chocolate dip and the grated coconut in a small bowl, first dip the biscuit cubes completely in the chocolate and then immediately roll them in the grated coconut.

These delicious, fluffy and juicy coconut cubes can be kept for a few days, provided they are not eaten straight away 😋

You've got my mouth watering for a bite of these little treats! So yummy looking. They definitely look light and airy, but decadent with that chocolate and coconut over top. A winning combination for sure!
