Hello my Dearest Foodies,

Happy Monday! How do you feel about delicious PERSIMMON SOOTHE with Quinoa Granola? Full of nutrients that will give you a boost in the morning or you can take it with you while on the go!!!

Persimmons are in season now, and even if they are not growing in Canada, they are sweet and juicy. Besides, the price is right too, lol. I bought the whole basket for less than $5 CAN, so I will be enjoying this smoothie everyday this week. Tangerines are in season now to and boy they are so yummy. Besides I bought dragon fruit too, for a very good price!!! Altough we only get the one with white flesh. Oh well.

Anyway, we just got new pile of snow over the weekend and the temperature is -10C here right now, so little bit of Tropical mood helps to cope with the cold winter we are having.

TROPICAL SMOOTHIE
Persimmon Smoothie with Quinoa Granola
Vegan โ€“ Gluten Free โ€“ Refined Sugar Free
Author: Lenaโ€™s Vegan Living

INGREDIENTS for 2 servings
โ€ข Persimmons 2 (cleaned and cut into cubes)
โ€ข Fresh squeezed juice with pulp from 4 Tangerines or Clementineโ€™s
โ€ข Juice from ยฝ lemon
โ€ข Coconut water ยฝ cup
โ€ข Chia seeds 2tbs

PROCESS
โ€ข Blend all in a blender until smooth, except chia.
โ€ข Add chia and mix thoroughly with spoon.
โ€ข Fill your jars or bowls, top with granola and fruits.

GRANOLA
โ€ข Quinoa flakes 1cup
โ€ข Raw pecans 1/2 cup (or nuts of your choice)
โ€ข Almond flour 1/2 cup
โ€ข Sunflower seeds ยฝ cup
โ€ข Virgin coconut oil ยผ cup (melted above the steam)
โ€ข Maple syrup ยผ cup
โ€ข Himalayan pink slat ยฝ tsp
โ€ข Baking pan
โ€ข Parchment paper

PROCESS
โ€ข Preheat oven to 400F.
โ€ข In the meantime, grind pecans in a food processor (make sure they remain chunky).
โ€ข In a bowl, mix all ingredients thoroughly.
โ€ข Spread evenly on your baking sheets and press down with your fingers all the way to the edge. Make it flat as possible.
โ€ข Bake for 15 to 20 minutes until golden brown.
โ€ข Let it cool down for few minutes and serve.

NOTE: You can make more and store in a sealed container. Just make sure you keep it in a cool and dry storage.

Oooooo! I LOVE persimmons! It grows in our area, although not successfully on our homestead. Can't say the same about the dragon fruit though. Never seen it in SA. I love that orange and pink colour. And of course your recipe, as always. Delicious and inspiring Lena

Hello Dear Tracey! Thank you so much for visiting and I am happy you like it. I believe that Dragon fruit mostly comes from central America, Caribbean, south parts of Asia, Australia and subtropical regions, which means it should be somewhere in Africa.........based on Google, lol. ๐ŸŒด๐ŸŠ๐ŸŒด

It's surprised me the exotic types of fruit that has made its way to our African shores in the recent years....so here's hoping for Dragon fruit!

We do not grow persimmon here. I even doubt if I have tried one before. Maybe I did once, from a friend from Australia. And it is yummy. The sweetness cannot be compared with any tropical fruit. Hahaha! ๐Ÿ˜Š

So lovely Lena! I had some truly delicious persimmons from the market about a month or so ago. I'll have to get my hands on some more as this sounds like the perfect escape from winter. Though it's nowhere near as cold here as it is up there. Brrr!
