Hello today is monday and monday is my favorite steemit day because of the @fruitsandveggiesmonday challenge from @lenasveganliving. Here is the like of the challenge if you want to join:)

Today I made a very quick lunch for me and my daughter.

I haven't used quinoa in a while and it is a lovely source of fiber and protein. Last week for my glucose blood test results shows that I was borderline with low iron so I'm really trying to increase my iron intake via my food. That is why I add a few green vegetables for this recipe.

  • 1 cup quinoa

  • 2 cups of water

  • celeriac

  • green beans

  • capsicum

  • garlic

  • ginger

  • Gochujang Sauce (Korean Chili Paste)

  • coconut oil

For this recipe i cooked

1 cup of quinoa with 2 cups of water for 15min at medium heat then let it rest for 10min.
While the quinoa was resting, I cleaned and cut my veggies.

Once ready I roasted all my veggies in a pan with a little bit of coconut oil, then I grated my garlic and ginger on the top of the veggies.

I added my quinoa and finish with a big spoon of Korean chili paste. I absolutely adore the taste of this paste it is a tiny bit spicy but also very tasty.

Very quick and easy recipe. And for more iron this morning I made a lovely fresh juice with beetroot, broccoli, orange, and pears. Delicious next week I will probably share the recipe:)

Aujourd'hui, j'ai préparé un repas très rapide pour moi et ma fille. Je n'ai pas utilisé de quinoa depuis un moment et c'est une très bonne source de fibre et de protéine. La semaine dernière, mes résultats d'analyse de sang de glucose ont montrés que j'étais a la limite d'un déficit en fer donc j'essaye vraiment d'augmenter ma consommation de fer a travers ma nourriture. C'est pourquoi j'ai cuisiné avec quelques légumes verts pour cette recette.

  • 1 tasse de quinoa
  • 2 tasses d'eau
  • Céleri
  • haricots verts
  • poivron vert
  • ail
  • gingembre
  • Sauce Gochujang (pâte de Piment coréenne)
  • huile de noix de coco

Pour cette recette, j'ai cuit 1 tasse de quinoa avec 2 tasses d'eau pendant 15 min à feu moyen puis j'ai laissé reposer pendant 10 min.
Tandis que le quinoa reposait, j'ai nettoyé et coupé mes légumes.

Une fois prêt, j'ai fait sauter tous mes légumes dans une casserole avec un peu d'huile de noix de coco, alors j'ai râpé mon ail et gingembre pardessus mes légumes.

J'ai ajouté mon quinoa et j'ai fin avec une grosse cuillère de pâte de piments coréenne. J'adore absolument le goût de cette pâte, c'est un tout petit peu épicé, mais aussi très savoureux.

Recette très rapide et facile. Et pour avoir encore plus de fer ce matin, j'ai fait un jus frais avec de la betterave, du brocoli, de l'orange et des poires. Délicieux, la semaine prochaine, je partagerai probablement la recette :)

Who says quick and easy can't be delicious? This looks amazing! 😋 I've been watching that same Korean chili paste in the supermarket a few times, but I haven't bought it. I like to try new things but I'm always afraid that I won't like them and therefore, I'd waste food. Now that you said you adore it, I think I'll buy a packet the next time I'll go grocery shopping. :)

This chili paste is delicious it has a very special taste and isn't too spicy but careful because once i bought the hot one by mistake and ho my gosh it was so hot we couldn't use it!!!

I managed to find the right one, even if I wasn't sure until I tasted it (there was basically no translations on the packet...)! The taste was a bit different than I expected. I don't know how to explain it, but it was different kind of chili paste than those I'm used to. However, I really like it, so thanks for encouraging me to try it! :)

Looks very healthy, I'm amazed you daughter likes all the greens as well!

She does really like them but i do a dramatical chewing of my crunchy veggies that makes her laugh and it gets her to want to eat them and do the same:)

There is never enough quinoa recipes and I absolutely love this one. Its sounds and looks mouthwatering. Great job my Dear and I hope your iron level will improve soon. I suggest also, kale, broccoli, cacao, beet root and spinach 🍒 🍌🍑🌿🍍🍓🍇
