Look at that load of deliciousness. A Green Chile Short-Rib Sandwich from the 7th Street Deli in Walsenburg, Colorado. I stopped in Walsenburg on my way to Great Sand Dunes National Park from Denver. It's a long trek and we needed to get a bite to eat before we explored the dunes.
This sandwich was phenomenal. It was served panini-style on a nice thick baguette bread. The green chiles provided a nice spice to the roasted short-rib packed inside. It wasn't an overwhelmingly large sandwich, but it certainly did not lack in quality. A great way to fuel up before we continued our travels.
