Vegan bio recipe: Green spring soup
Green spring soup
ingredients:
4 zucchini
4 branches of flat parsley
6 sprigs of chives
8 branches of chervil
2 cloves garlic
2 cubes of defatted poultry broth
Salt pepper
goat cheese
Preparation:
Wash zucchini and cut into pieces, without peeling. Wash and chop the herbs. Peel and squeeze the garlic cloves.
In a casserole, bring 80cl of water to a boil. Add the bouillon cubes, garlic and zucchini. Cover and let simmer for 20 minutes over low heat.
Add the herbs and mix the soup. Crumble the goat cheese in the casserole, and let it melt while mixing. Salt and pepper according to your tastes.
Serve immediately, and enjoy yourself in all lightness!
