Pie with shepherd’s sausages: my mother’s idea
This pie can be really tasty provided you use tasty sausages ; we had some sausages we had bought from a village and were traditional, hand-made ones…I am guessing you can also buy really tasty ones from your butcher.
Ingredients: 2 shortcrust phyllos, 2 sausages 250 gr, 20 cheese slices (we used Milner), 1 tbsp tomato paste, 5 tbsp of olive oil, salt and pepper
You cut the sausages, put them in a pan with half the olive oil and let them fry and extract their fat. Strain the sausage pieces and keep them on the side. In a big tray, lay the one phyllo and in half its surface apply half the tomato paste. Then lay 6 slices of cheese slices on top of the tomato paste, then half the sausage, then 4 slices of cheese. Roll over the remaining phyllo above the last layer of cheese slices and press the sides to close the pockets. Do the same with the remaining phyllo and ingredients. Apply the remaining olive oil on top of every phyllo so as to moisture them.
We baked in the oven in 180C for 45’.
