1.00 cups bread crumbs | |
2.00 tablespoons butter | |
14.00 ounces chicken broth | |
0.50 teaspoons herbes de provence | |
4.00 pounds leg of lamb | |
1.00 onion | |
2.00 pounds potatoes | |
1.00 tart apple |
Cooking Instructions
Step 1
Place leg of lamb on a rack in a roasting pan. In a small bowl, combine the bread crumbs, butter and seasonings; spread over meat.
Step 2
Place onion in pan; pour broth over onion.
Step 3
Bake, uncovered, at 325° for 1 hour.
Step 4
Add potatoes; bake 30 minutes longer.
Step 5
Add apple; bake 30 minutes longer or until potatoes are tender and meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°).
Step 6
Remove vegetables and apple and keep warm.
Step 7
Let roast stand for 10-15 minutes before slicing.
