Curry Honey Mustard Chicken
This Curry Honey Mustard chicken was an experiment but turned out rather good. I still need to tweek the recipe a bit. I think I would add a little more honey. The mustard and curry were spot on. Served with some risotto and wild rice with a side of peas.
Curry Honey Mustard Chicken
INGREDIENTS:
2-3 pounds boneless chicken breasts - seasoned with salt and black pepper
Sauce:
2 tbsp melted butter
4 tbsp olive oil
3/4 cup Dijon mustard
1 tbsp prepared mustard
1 tbsp stone ground mustard
1/2 cup honey
1 tsp minced garlic
2 tbsp curry
Baked at 375 F covered for 15 minutes, uncovered and baked at 350 F for 40 minutes.
