Korean Beef & Vegetables @senseicat

There are so many variations with this specialty dish, but this is my dinner for this evening as I eat alone. The key is fresh and high quality ingredients and most especially, a huge dose of love.

Ingredients:

1/2 pound grass fed beef
1 large zucchini
1 large cucumber
1/4 cup of chopped green onions (whites and stems)
Fill 1/8 cup measuring cup with mostly mostly seasame oil plus the rest of it in coconut aminos
1 TBSP. Sesame seeds
1/4 tsp. Salt
Steamed rice

I normally serve this with roasted seaweed and kimchee, but since I already had kimchee earlier, I opted to have the dish simply with brown organic rice.

Step 1:

Wash and slice zuchinni and cucumbers into fine slices
Salt
Set aside for 30 minutes

Marinate beef with green onions, seasame oil, seasame seeds, and coconut aminos for 30 minutes to let the deliciousness soak in before cooking on medium heat. After the beef is cooked halfway, add the vegetables.

Very simple and seems to be very tasty. Would love to have it prepared since we normally eat marinated beef a lot.

It is also gluten free, nutritious, and delicious!
