Horchata de chufa (Tiger nut milk) - My easy and simple recipe

Usually this drink takes 24h to be made, but here is my simple and really fast recipe! This drink is vegetable, gluten-free, dairy-free, refined sugar!

This drink contains:

Chufa (Tiger nuts)

Chufa also known as tiger nuts is a crunchy nut with a delicious sweet almond flavor. It is naturally gluten-free and rich in nutrients: vegetable proteins, iron, calcium, magnesium, phosphorus, potassium, vitamin E, fibers in addition to having a low glycemic index.

Coconut Sugar

We obtain a delicious creamy drink with a good taste of sweetened and caramelized almonds thanks to the sugar of coconut. It is the ideal substitute for refined sugar. In addition to being rich in nutrients, it has a low glyceric index and a delicious caramelized taste that marries subtly well to the taste of this drink.

Raw vanilla powder

Vanilla is antioxidant, stimulating the nervous system, it can fight against intellectual and physical fatigue and also against insomnia. It is an antistress and natural anti-depressant in the same way as chocolate. It is antiseptic, regenerating, regulates the appetite and facilitates digestion!

Cinnamon stick

Cinnamon is extremely beneficial for health, it is one of the most antioxidant spices! It is ideal for protecting the skin and the body from premature aging but also has other properties: stimulates the immune system, energizes, regulates the intestinal flora, and improves digestion.

The preparation is simple and quick. It is best to drink it on the day of preparation but it can be kept 2 days in the cool. Here is the simple recipe!

For 1.2 L of beverage, you will need:

  • Chufas/Tiger nuts (Chufas have a sweet almond taste comes out much more. It's also delicious to snack like it is)
  • 50g of coconut sugar (to be adapted according to tastes)
  • 1 L of mineral water or spring water
  • 1/2 cup of raw vanilla powder
  • 1 cinnamon stick

Preparation

In a blender, put the tiger nuts, water, vanilla and mix until you get a milky liquid. Let it cool 20 minutes with the cinnamon stick so that it infuses into the milk.

Filter the milk using a clean cloth. (Do not throw the residue obtained, it is very rich in nutrients and can be incorporated in several preparations such as biscuits).

Add the coconut sugar, mix and ready. Pour the milk into a glass bottle. And VOILA ! You can add crushed ice for an even more refreshing drink! Hope you try this! :)
