Pork loin with passion fruit sauce
INGREDIENTS
2 kg of lean loin
1 bottle of concentrated passion fruit juice
1 liter of filtered water
2 cups crystal sugar
1 large onion
1 tablespoon butter
salt
METHOD OF PREPARATION
In a jar mix filtered water, with passion fruit maguary juice and crystal sugar and set aside.
Take the loin, remove excess fat and soak it in filtered water for 10 minutes.
Drain the water, pierce the loin with a cutting edge knife and season it with salt only.
In the stone pan, place the butter and chopped onion into strips.
Fry them until "burnt on the edges".
Place the tenderloin and gradually drip the passion fruit juice until it is cooked. Once cooked let the juice dry and turn into a thick stock. Serve with crumbs and rice.
