Louna's easy recipes! - lamb liver with chermoula-
Hello steemiens friends,
I present to you in this post a very easy way to prepare lamb liver as it is called in Morocco "kebda mchermla".
Ingredients
250g of lamb liver.
2 cloves garlic
3 c. coriander.
salt, black pepper, and sweet paprika
3 c. tablespoon of olive oil.
2 tomatoes puree
1 C. and a half vinegar
Method
- Clean the lamb liver and cut it in medium ways.
- In a heavy-bottomed pan, place the oil and let it warm well before adding the liver pieces.
- Cook the liver from all sides to have a beautiful golden color without too much cooking.
- Remove the liver from the pan without cooking oil.
- In the mortar, place cloves of garlic, salt, black pepper, and sweet paprika.
- Crush everything well, and place the mixture or chermoula obtained in the cooking oil of the liver, add over a little water, so that the garlic does not burn.
- Fry a little and then add the fresh tomato puree
- Cook until a little oil appears on the surface and put the liver back in the sauce.
- Add on top a little fresh coriander and vinegar.
- Cover and cook for 15 minutes, then remove from heat.
- Decorate the dish with fresh coriander before tasting.
