Double Chocolate Mint Cookies

It has been one busy week and as I was passing by my herb garden I noticed that the chocolate mint plant has taken over like a weed. I was thinking how can I use my mint and the first thing that popped into in my head was chocolate and mint cookies. Chocolate and mint is a classic combination but I am not a fan of peppermint extract so I wanted to make some cookies using the fresh mint in place of the extract.

Oreo Chocolate Mint Cookies

• 9 oz butter
• 6 oz light brown sugar
• 6oz sugar
• 2eggs
• 1 tsp vanilla extract
• 10 oz All-purpose flour
• 2.6 oz cocoa powder
• 1 tsp baking soda
• 1/2 tsp kosher salt
• 1/4 cup of chocolate mint leaves, thinly sliced
• 10 oz chocolate chips
• 4 oz Oreo cookies, coarsely chopped

Sift together the flour, cocoa powder, baking soda and salt, set aside. Cream the butter with both of the sugars. Stir in the vanilla extract and mix in the eggs one at a time. Add in the fresh mint.

Blend in the flour and cocoa powder mixture. Stir in the chocolate chips and Oreo cookies.

Use an ice cream scooper to portion out the cookie dough into 1 inch balls. Bake in a 350 degrees F oven for 15-17 mins minutes or until the cookies are slightly firm to touch in the center. These cookies are better a bit slightly underdone. They are decadent and the mint in the cookies add a unique pop of freshness. Now you just need a glass of cold milk to go with these cookies.
