Lemon Pickle📷

Well, lemons again!! After my previous post, Lemon truffles with white chocolate,this recipe wasn't in my plans.
I rarely take photos from the preparation of my foods, but this caught my attention from the very first time(yesterday)and I thought that it was a nice idea to take some pictures..These lemon pickles will be ready to eat in 15 days, but the colors, the textures and the aromas(unfortunatelly I can't transfer this marvelous fragrance through images) were so beautiful to wait..
Lemons ,in winter time ,are more juicy, aromatic and tasty than any other season of the year.And these delicious lemon pickles, inspired by Moroccan cuisine have the ability to add a wonderful citrusy scent with an irresistible fragrance and a unique rich flavor to your food!You can use them to many dishes, that lemon is a main ingredient and fit perfectly with meat!Lemon pickle is also a tasty addition to salads(use the rind, finelly chopped).It is so easy to make, try it!

ingredients:
-10 lemons
-2 cups coarse sea salt
-fresh lemon juice( 5 lemons)
-2 tablespoons corinder seeds
-extra virgin olive oil

method:
-take each lemon and cut four sides, but carefully, because the lemon must be intact and whole
-open each lemon and sprinkle some salt
-place the lemons in a clean glass jar
-add salt, lemon juice and coriander seeds
-tightly close the jar and keep in a cool and dark place for 2 weeks
-shake the jar at regular intervals,to evenly spread the salt and the juice
-after 2 weeks, open the jar and add olive oil
-make sure the lemon pickles are covered with oil
-transfer and keep the jar with lemon pickles to the refrigerator
-you can use them for a few months
