SundayCook #28 - Tuna lasagna with red-pepper and carrot

Hello fellow Steemians!!

Surprise surprise!! Here's another SundayCook!!

I wasn't expecting to prepare this either but plans changed and I earned time to cook! I was dreaming with tuna lasagna for months, this last Sunday was the day!!

I searched for recipes on Google to get inspiration, but I already knew I wanted to use tuna, onion and red-pepper!

This Sunday I cooked

Tuna lasagna with red-pepper and carrot

This might not be the most typical Portuguese dish, but I make sure the flavors are by adding parsley, bay leaf, and white wine.

Ingredients

  • 600 ml béchamel
  • 300 grams canned tuna
  • 1 medium onion
  • ¾ red pepper
  • 2 carrots
  • 1 bay leaf
  • parsley (to taste)
  • grated cheese (to taste)
  • 12 lasagna sheets
  • olive oil
  • black pepper​ (to taste)
  • salt (to taste)
  • white wine (to taste)

Directions

  1. Put the olive oil, the chopped onion, red pepper and the bay leaf in a frying pan and saute over low heat until both starts to cook.

  2. Drain the tuna and shred it with a fork. Add the shredded tuna, season with a little of black pepper and salt. Let it cook for about 4 to 5 minutes, stirring occasionally. Refresh it with the white wine, let it evaporate. Turn off the heat and sprinkle with chopped parsley.

  3. With​ a food processor chop finely​ the carrots and add to the previous mixture. Set aside.

  4. Prepare de Béchamel sauce and preheat the oven to 180ºC / (350ºF).

  5. Put on the bottom of a baking pan three lasagna sheets and, on top, a layer of tuna. Sprinkle with grated cheese. Add another lasagna layer and cover with béchamel sauce. Repeat the tuna and cheese two more times, and finish with three lasagna sheets. Drizzle with the béchamel mixture and cover with aluminum foil.

  6. Bake for 30 minutes (until the pasta is cooked). Remove the aluminum foil and let it bake until golden.

  7. Turn off the oven, sprinkle with parmesan cheese and serve the lasagna with lettuce and tomato salad.

(I would loved the lasagna got moisty, but I over cooked it, my fault. But it's yum anyway.)

What is Sunday Cook?!

These Sunday Cook project began with a strong will to contribute to Steemit with my personal view of Portuguese cuisine. I really believe we have plenty of good food. I'm not a professional or nothing similar, but I can assure that I'll do my best!

On Sundays, I like to prepare more elaborate and delicious food. It requires time and patient. Usually, I cook some traditional Portuguese food, or at least with Portuguese inspiration :) I try to do it in a healthier way, using the minimum fat as possible, and normally I pick some recipe and transform it. During the week I don't like to spend much time cooking (no time at all), that's why I get totally motivated to cook on Sundays!!

Ahah, thanks for making me laugh! I guarantee the flavors are great, but don't let it cook too much as I did! Guess a bit more of bechamel wouldn't be bad, but it was a SundayCook, not a professional recipe!! ;)
