SundayCook #26 - Green bean soup welcoming summer time

Since a child I remember to eat green beans during summer, in soups or as a side dish. My grandmother and neighbors used to grow them, so we always had plenty to eat.

Nowadays, and due to greenhouses, it's possible to buy green beans during all year, but...

I'll always prefer them in Summer!

This Sunday I cooked

Green bean soup

Ingredients

  • 300 grams green beans
  • 3 small sweet potatoes
  • 5 small/ medium potatoes
  • 4 carrots
  • 2 medium onions
  • 5 garlic cloves
  • 3 tablespoons olive oil
  • Salt (to taste)

    Usually I would use turnip or zucchini instead of sweet potato, but I forgot to buy it on the market last Saturday. You can check here those green beans that I bought in the market.

Preparation

  1. Peel and wash the onions and garlic cloves, and cut into pieces. Place them in a large saucepan with the olive oil and let it fry in medium heat for 4-5 minutes. Peel and wash the potatoes and carrots, and also cut into pieces. Add them to the saucepan and cover with a lid. Let it cook for 5-10 minutes over low heat. Cover the vegetables with water, let it boil over high heat. When starts boiling, reduce to low heat and cook for about 20 minutes.

  2. Meanwhile, prepare the green beans by cutting its extremities​ and wash. Cut the green beans cut into small pieces.

  3. Remove briefly the saucepan from heat and blend the soup until creamy. Stir and put the saucepan back on the stove over high heat. When it starts boiling, add the green beans, stir and cook for more 10 minutes over medium-low heat.

It's ready to serve!!

What is Sunday Cook?!

These Sunday Cook project began with a strong will to contribute to Steemit with my personal view of Portuguese cuisine. I really believe we have plenty of good food. I'm not a professional or nothing similar, but I can assure that I'll do my best! On Sundays, I like to prepare more elaborate and delicious food. It requires time and patient. Usually, I cook some traditional Portuguese food, or at least with Portuguese inspiration :) I try to do it in a healthier way, using the minimum fat as possible, and normally I pick some recipe and transform it. During the week I don't like to spend much time cooking (no time at all), that's why I get totally motivated to cook on Sundays!!

I haven't had green bean soup since my childhood. I am definitely going to make this! 😋

That's great!! Glad I inspired someone to cook my soup. I like the result, but ususally I would never use all this potatoes. I would run for 1 or 2 zuchinis and 2 or 3 potatoes only.

How great! I don't see people using fresh green beans that often. But they are so good. I really like growing them, too -- bush varieties and pole beans, too. I freeze a lot of them, but fresh-grown is best!

I used to have a lot of greens when I was younger because my two grandmothers grew it and my mother used to freeze beans too. Now I have to buy it from local producers. I was really missing this green beans flavors, one of the best soups I've eaten recently! :)
