I Steemian fellows!! I'm sorry for this late Sunday Cook...as you can imagine Christmas took me some time, also the travels and extra work (I had my master thesis public presentation, yesterday, I will write about it as soon as possible, so excited with that!).

I spent my Christmas evening with family (my mom, aunts, uncle, and cousins). It was ok, but in a perfect world I would reunite all my family at once and made some brain wash too, so they could forget the differences and don't start arguing with each other.

We had a great dinner!! In Portugal, my family included, we have cod fish with boiled potatoes and galician cabbage (I didn't take pictures).

For Christmas day my family doesn't have special tradition to get a big reunion for lunch (like the 24/25 evening), but we like to visit grandma after lunch :)
So this year it was perfect because Christmas Lunch was on Sunday...and we (me and my mom) love to have good food on Sundays! I think I've mentioned it before ;) ahah

This Sunday we cooked ...a very special Christmas Roast

Lamb roasted in the oven with potatoes and galician cabbage

Hope you like lamb but guess you can cook this recipe with any other type of meat

Ingredients

Part 1 - previous seasoning

  • lamb leg
  • garlic clove (we used half garlic bulb)
  • black pepper and salt (to taste)
  • sweet red pepper sauce (to taste)
  • white wine
  • 2 lemons
  • 2 bay leafs

Part 2 - Put in the oven

  • 2 medium onions

  • red pepper (half)

  • small potatoes (to taste)

  • olive oil

  • galician cabbage

  • carrots

Preparation

We season lamb meat on Saturday afternoon (before leaving to my aunt house for Christmas evening) with all those ingredients and reserve.

In Christmas morning...after having some pastries and coffee for breakfast (late breakfast) we start cooking lunch. Here's the step by step:

  1. Pre-heat the oven 180 ºC - 200ºC

  2. Pick a​ roaster tray and cover it with chopped onion and sliced red pepper

  3. Add the lamb meat, olive oil and some of the gravy. It's ready to go to the oven (180ºC)

  4. During the cook we sprinkle the meat and potatoes with the released juices

  5. Meanwhile, it's time to prepare the cabbage and carrots and boil it

    (We also use this variety of cabbage for our traditional Christmas dinner)

  6. The lamb meat is ready!!

  7. It's time to serve!!




As you may noticed we serve this meal with a glass of regional white wine! Excelent!

What is Sunday Cook?!

On Sundays, I like to prepare more elaborate and delicious food. Usually, I cook some traditional Portuguese food, or at least with Portuguese inspiration :) I try to do it in a healthier way, using the minimum fat as possible, and normally I pick some recipe and transform it. I like to make it practical and leave the minimum dishes to wash...as I don't have a dishwasher machine!

During the week I don't like to spend much time cooking (no time at all), that's why I get totally motivated to cook on Sundays!!
