Falafel with Chicken Soup

I traveled to Israel one year when it was relatively peaceful. I experienced several foods and drinks that made a lasting impression on me. One was homemade falafel.

Since then, I have learned to make my own using this recipe from Epicurious. I have made it for my friends and family who enjoy it well.

When I traveled to Jerusalem, there was a shop in the bus station that sold fresh pomegranate juice. At the time, I thought that it was expensive because a 16 oz cup was $8.00. The man cut the pomegranate in half and then manually squeezed the juice with a ratchet type juicer.

There are no words to describe the taste. Magnificent! Refreshing! ... and healthy. When I got back to the states, I found and planted a pomegranate tree. I was able to get several seasons of fruit, but I had to cut it down because I planted the tree too close to my house.

I looked for the manual juicer that I saw in Israel for a while. The only thing that I found close to it was a restaurant quality juicer and it was almost $300. Needless to say, I could not afford that juicer so I bought a less expensive one but it would not handle the tough skin of a pomegranate. It was only useful for lemons, limes, oranges and grapefruit.

When pomegranates are in season, I buy them by the bag full. I love eating them and drinking the fresh juice. I am reminded of Israel because I am going to cook some falafel to go with my homemade chicken soup that I made yesterday.

Thank you. My falafel is as delicious as the one in the stock photo even though it is not as pretty.

I just love falafel and I bet homemade is even better than what we purchase from the restaurants.
