Whats COOKING Good Looking... SPICY, GLAZED PORK RASHERS WITH ROASTED SWEET POTATO & BELL PEPPERS

Yesterday I decided that its been a little while
since I have shared any of my cooking with all of you,
so I contemplated what to make, made a decision
and then headed off to get the ingredients,
only to get to the store and discover that they had nothing
of what I needed! lol

I was stumped! I stood staring at the meat shelves
for about ten minutes in complete denial lol...
Nonetheless, improvise it was... haha!

I grabbed some pork rashers, threw them into the trolley
and headed towards the veggie section...
grabbed pretty much "whatever" and gave it little to NO thought!

Got home and this is what I had bought....

Hmmmmm.... alrighty then....
now, what to do with it all! haha!
My family were true guinea pigs last night haha!

But that is one of the things I love most about cooking.
There is no real right or wrong,
and there is always plenty of room for creativity...

So this is my...

SPICY, GLAZED PORK RASHERS WITH ROASTED SWEET POTATO & BELL PEPPERS

......

As many of you know, I do try to limit my carb intake,
so this is a great meal for precisely that!

Firstly, I took the two packs of rashers,
placed them into a mixing bowl to marinade...

and then I headed into my fridge so see what I had
to marinade them with... lol!

I pulled out the following:
Crushed garlic
Sweet chilli sauce
Soy sauce
Chutney
Fish sauce
cheeky chilli jam
A little salt and pepper

Seemed a good enough selection to me lol

I pretty much put about a dessert size spoon dollop
of each (except the salt and pepper)
into the bowl with the rashers,
mushed it up nicely with my hands
and then set it one side to stew!

While that was lying in all its awesomeness...

I prepared the sweet potato cubes for roasting.
Yes, I decided to roast them lol!
I tossed the sweet potato in the following...

Olive oil
Vegetable spice
Potato spice
A teaspoon of honey

I spread the potatoes out evenly on a baking tray,
preheated the oven to 200 degrees Celsius,
popped the potatoes into the middle of the oven
and roasted them for about 40 minutes.
20 minutes, then turning and another 20 min after.

this was the end result...
perfectly golden roasted sweet potato...
YUM!

Then, I took the pork rashers,
and spread them out on a baking tray and popped them
into the oven, slightly more towards the bottom
and put the oven onto grill -
and grilled them, turning often...
for about 40 minutes.

While the rashers were grilling,
I chopped up the bell peppers...

and then about a handful
of coriander (cilantro)...

I heated the frying pan quite high -
added a dollop of olive oil,
then threw both the peppers and the
coriander in and fried them for about
15 minutes...

This was the end result
with the peppers...
Not overcooked, but more "wilted"

Once I was done with that,
and the rashers were also ready,
I contemplated how I would serve this...

I quite like the idea I came up with
and will definitely do this again,
as it would work really well
when entertaining multiple guests.

I decided to platter everything...
So I layered the fried peppers and coriander
on the bottom of the platter,
scattered the roasted sweet potatoes,
added the glazed rashers, topped it all
with spring onion rounds, crumbled feta
and accompanied it with freshly chopped thai chilli
on the side, which had been
resting in olive oil.

I then placed it at the centre of the table
and everybody simply helped themselves.

Despite not actually having a CLUE
where I was going with this meal,
I was very pleasantly surprised at how delicious
the end result was!
