Slow roast pork belly for a Thai salad is what I made today.
This beauty took me 2 hours to roast. I seasoned it with only salt, pepper and lime zest.
After spending a lot of time in Thailand, I ate a lot of spicy pork salad at the street food stalls. It was my go to dish and now this is the second time I made it during lockdown.
