Cooking DIY·Sweet and sour hairtail

This kind of hairtail is crispy on the outside and tender in the inside. It is moderate in sour and sweet. It can be eaten as a snack.
It's also quite simple. Babies who don't like fish often fall in love with it.
600g hairtail fish, half spoon old soy sauce, 1 spoon raw soy sauce, 2 spoons cooking wine, 2 spoons old vinegar, 15g white sugar, half bowl starch, a little leek section, raw ginger, dried pepper, red pepper ring, onion powder.
Remove the intestines of hairtail, wash and cut into 5 cm sections. Marinate the cooking wine and ginger for 10 minutes.
Wrap the marinated hairtail with starch, fry in oil over low heat until both sides are golden, do not fry.
Add old soy sauce, raw soy sauce, oyster sauce, vinegar and sugar into the bowl to make sweet and sour juice.
Stir fry the scallion, ginger, garlic slices and dried peppers in the bottom oil of the pot. Pour in the fried hairtail, add half of the water that is less than the hairtail, add the sugar and vinegar juice, bring to a boil over high heat, cover the pot and simmer for 5 minutes under low heat, pour in the water starch, thicken the sauce, collect the juice and start the pot.
Sprinkle with red pepper ring, sprinkle with a little hot oil, sprinkle with scallion.
