Can't Beat the Beet!

Beets are one of my favorite vegetables.
Their vibrant color is such an attraction, as I'm also drawn to other foods with this bright red color---pomegranates, cranberries, raspberries...

We grow some amazing beets at the @gardenofeden. Our rich soil created from what most would consider waste is the perfect medium to grow this healthy addition to our diets.

Not only are the beets amazing, but the greens provide nourishment too until the beets are ready to harvest.


I've never had or created a beet dish I didn't love. I look forward every year to the plethora of dishes we make from beets, especially when prepared sustainably over a rocket stove built by hand with soil from our grounds, and fueled with wood that would otherwise have ended up in the landfill.


Cooking over fire feels so wholesome, and the love that is infused in the food so tangible to the palate and the soul.


After cooking these beets until tender in coconut oil, we made them even more juicy and delicious with:

Olive Oil
Balsamic Vinegar
Homemade Pineapple Vinegar
Diced Habanero
Fresh Chocolate Mint
Creamy Feta Cheese


Then we turned this amazing beet salad into a pizza!

We loaded the crust with a savory sauce,
provolone, cheddar and mozzarella cheeses,
and fresh diced sweet onion.

We cooked that pizza in the cast iron skillet with a lid over the rocket stove flame until the cheese was melted, then took off the lid and let the crust get brown and crispy!

Food with ingredients fresh from the garden, made sustainably without electricity, gas, packaging, shopping or supporting realities we feel are detrimental to life itself, tastes soooooo amazing! And our souls feel amazing too for being a grand part of the solution to so many realities that are creating havok on our planet.
