Ulog #97: Patatas Bravas - Spanish Potato Dish
So I've been making some specials at my food truck and before the my previous post on the Irish Lamb Stew special, I did this dish the previous week.
Patatas Bravas!
It's a dish I fell in love with when I tried it at a restaurant in town. I've only ever tried it once, asides from the ones I cook on my own, and it's really an awesome potato dish.
I started reading online and searching up recipes and realised that there are many variations to this dish. It's basically potatoes that are doused with some sort of sauce or gravy. Sounds familiar to other cultures right? Seems like wherever you go in the world, you have some sort of potato covered in gravy dish.
I suppose it's the most common recipe to elevate the humble potato.
As for mine that I serve at my food truck, I remove the skin and parboil the potatoes until tender. I then lay it out to cool on a tray and then put it in the freezer when it doesn't have any steam coming out from them.
After they are "dried", I pan fry them with butter (lots of butter) on the griddle as they get crusty. It's laced with our signature spicy garlic aioli that we use for our cheeseburgers and then garnish with some chopped parsley for colour.
So far the reviews from people that have tried them are positive. I think I'll be putting it as a permanent on the menu or maybe more regularly at least.
