Organic Pasta - 15 minute start to finish

The beauty of this recipe is that it's very fast, healthy and isn't wanting for flavor or sophistication. I'm usually on the carnivorous side but, honestly, I wouldn't add any meat to this dish.

Serves 2

(Organic)Ingredients:

-Vine Ripe Tomatoes
-Garlic
-Yellow Onion
-Fresh Basil
-Zucchini Noodles
-Feta
-Parmesan
-Extra Virgin Olive Oil
-Red Chili Flakes
-Salt
-Pepper

*Organic fresh produce is what makes this dish.

Preparation:

  1. Chop 1 tomato and set on baking sheet.
  2. Season tomatoes with salt and pepper and drizzle with olive oil.
  3. Bake tomatoes at 350 for 10 minutes.
  4. Chop 4 cloves of garlic.
  5. Dice 1/4 cup whole yellow onion.
  6. Add 1/4 cup of extra virgin olive oil to medium sauce pan.
  7. Add garlic and onion into sauce pan.
  8. Add pinch of salt and a couple of dashes of red chili flakes to sauce pan. Cook for 3-5 minutes on medium heat. Garlic and onions should turn lighter in color. When garlic starts to brown, reduce heat.
  9. Crumble approximately 3 oz of feta into a bowl.
  10. Grate approximately 3 oz parmesan into bowl with feta.
  11. Add zucchini noodles to sauce pan and raise heat to medium-high. Toss and saute for 3-4 minutes.
  12. When tomatoes have cooked for 10 minutes, remove from oven and set aside.
  13. Roll tightly together 5 or more fresh basil leaves and thinly slice into chiffonade. Set aside.
  14. Once noodles are cooked(they should look slightly translucent but still have crunch) remove pan from heat.
  15. Add parmesan, feta, and tomatoes to noodles into sauce pan and toss.
  16. Plate with tongs and garnish with basil chiffonade. Add more red chili flakes to suit spice.

This is like spaghetti al pomodoro dissected with intense flavors that mingle well. If you want to add meat, I recommend shrimp, clams or any kind of seafood.

Seriously, this is lovely.......Vegetarians would love this totally. Although it may not so that yummy in taste but the combination of different fruit and vegetable makes this food a good choice. fruit and vegetable are great source of vitamins, antioxidants and phytonutrients...Good Job!!!Keep it up

Thanks for the sincere comment. I'm learning to cook healthier on a ketogenic diet. I'm used to very flavorful styles of food like cajun, mexican, and vietnamese so, I was very happy when this came out the way it did.
