Filipino Food: Cooking Recipe #04 "Lechon Paksiw"

Hi.! Here is my 4th series of Filipino Food Cooking Recipe: "Lechon Paksiw"

My Mother-inlaw bought ("take out") a lechon last night from the birthday party of her friend.
I am not a fan of lechon lol.! But most of the Filipino's like lechon. It's like a tradition to see a lechon on the dinning table especially on their special occasions. Like birthdays, weddings, christening, thanks giving, fiesta and most of all on Christmas and New Year.

Are you one of them who likes lechon too.? Well youre on the right track. I have an idea to make your Pork Lechon left-over into delicious Lechon Paksiw.

So eto na nga.! This is it..😊

INGREDIENTS:

1kg. Pork lechon "roasted pig" (left over)
1 cup lechon sauce (mang tomas)
6 cloves of garlic, crushed and chopped
1 large onion, (chopped)
3-5 pieces of dried bay leaf
1⁄2 cup of brown sugar
3 tbs. soy sauce
1⁄2 cup of vinegar
2 cups of water
small can of Liver spread
1 teaspoon whole black pepper
Salt to taste
Siling haba "chilli" (for a little bit of spice)

You can also add banana blossoms, But unfortunately i don't have it. Anyway it will do even i don't have banana blossoms.

INSTRUCTIONS

*In a cooking pot or large pan. Sauté garlic and onions over medium heat until onions become translucent in color.
*Add the lechon sauce, water, sugar, soy sauce and vinegar, bring to boil.
*Then add the liver spread and whole black pepper
*Add the leftover lechon.
*Simmer over medium-low heat for about 5-10 minutes or until the meat is tender.
*Simmer for low heat while continuously stirring until the sauce becomes thick.
*Add the chilli and salt to taste.

*Serve hot with rice and don't forget your extra rice. Lol.!😁

Take note: You can adjust the measurement of the seasoning, such as salt, sugar and vinegar, according to your taste.
