In one way or another, control freak me founds zen in baking.
Baking requires precision and patient, it will reward you with scrumptious goodness in the end.
However, this recipe is an exception, you could modify the baking time and the size of the baking tray to suit the consistency you like.
In my case, I sometimes like to bake it in smaller trays, so the batter will be higher, therefore if you bake it according to the recipe, the inside will be molten chocolate lava.
However, for first-timer, I would suggest you follow this recipe as it is and see how you can modify it next time ;)

Ingredients
8 ounces good-quality chocolate

¾ cup butter, melted

1¼ cups sugar

2 eggs

2 teaspoons vanilla

¾ cup all-purpose flour

¼ cup cocoa powder

1 teaspoon salt

PREPARATION

  1. Preheat oven to 350°F/180°C.

  2. Chop the chocolate into chunks. Melt half, then save the other half for later. I like to melt chocolate in a bowl, on top of a simmering water. The heat is gentle enough to keep the chocolate stays melted, yet it is not too hot when you need to add it to the next step

  3. Mix the butter and the sugar.

  4. Then beat in the eggs and vanilla for 1-2 minutes until the mixture has become fluffy and light in color.

  5. Whisk in the reserved melted chocolate (make sure the chocolate is not too hot or else the eggs will cook, remember why I use water bath?)

  6. Sift the flour, cocoa powder, and salt into the batter. Fold the dry ingredients into the wet ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.

  7. Fold in the chocolate chunks, then transfer the batter into a parchment paper-lined square baking dish. Normally, I would use size 26x20 cm baking tray, the one on the picture is smaller, but I would like to have it still melting in the middle.

  8. Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely. Mine is perfect at 22 minutes.
