Coconut Mango Chia Seed Pudding

Learn how to make a super-easy breakfast with fresh mango, omega-3 rich chia seeds, antioxidant-rich goji berries, and medium-chain saturated fats from coconut milk. While it needs a few hours to set, this yummy breakfast or snack can be made in less than 10 minutes.

Ingredients (serves 2)

3 cups mango, diced (save some for garnish )
2 cups unsweetened coconut milk or other milk of your choice
1/2 cup plain unsweetened yogurt or coconut yogurt
4 tablespoons chia seeds
2 tablespoons maple syrup or raw honey

Instructions

  1. Puree 2/3 of the mango chunks together with the milk in a blender.
  2. Combine the mango-milk mixture with the yogurt, chia seeds, and honey. Stir well.
  3. Pour into one big bowl. If you are planning to take it with you or serve it as a snack to guests, divide over 1-portion jars or bowls with lid. Cover the bowl/jar with plastic wrap/lid and let chill in the refrigerator for a few hours or overnight.
  4. Divide chia seed pudding evenly into two bowls and garnish with diced mangoes.
  5. Add other toppings such as other fresh fruits, goji berries, mulberries or cacao nibs if you like. But this is totally optional.

Note: can be stored in the fridge for up to 3-4 days. Use different toppings to keep things interesting if planning to make this as a breakfast for a few days.

This sounds heavenly, I love coconut and Mango :)

It sure was heavenly @karenb54! Nothing beats the flavor of fresh mango when they are in season!

That looks good to have in a jar. It's nice to have breakfast already made the night before sometimes. It would be great with that mango, for sure! :D

I have made similar jars with any kind of fruit. Kiwi and fresh berries are delicious too.
