Offgrid Gardening in Hawaii - Moringa Bean Pods

Our Moringa tree continues to produce beans.

We are still experimenting on ways to eat them.

The two best ways so far are as follows (both involve boiling the beans for the initial prep):

The juvenile beans are either used in salads, pan fried in garlic butter, as a substitute for other beans in stews and chilis.

The mature pods are split open and the meat is scraped out and then baked.

The taste of the Moringa takes a little getting used to but like with the fish it is all in the preparation.
