Some of these quotes I am finding online, like this one. I really like this quote, but I do not know much about Saint Francis of Assisi. I just read a little bit about him. He is the patron saint of animals and the environment. He lived in the 11th and 12th century. (Quite a while ago!) I'm not sure if he actually was an artist himself. It looks like he just really appreciated the arts, and artists. Interesting to note: Pope Francis honored Saint Francis of Assisi by taking on his name when he became the Pope in 2013.
