Cook with Us #16 - RAW+VEGAN Portobello Pizza with Almond Feta

in #cookwithus6 years ago (edited)

It is time for a shift...

Our beloved pizza - I think the time has come that this popular dish looses its reputation of being pretty unhealthy and steps up its game to a more nutritious version. And if you might feel reluctant to even read further whenever you hear a dish to be healthy, stay curious since this pizza is not only good for your body, but also a treat for your foodie taste buds.

Get creative, without any fancy kitchen equipment

There are some amazing raw vegan pizza recipes out there, but for most of them you will need a dehydrator, which does not yet belong to the standard kitchen equipment. Fortunately there are already some innovative companies out there creating raw vegan pizza bases as a ready-made product, but those are still not available all around the world.

Nevertheless, you don’t have to miss out on getting creative with some raw pizza varieties, since portobello mushrooms make an excellent base.

Subtle sweetness, crunchy texture, rich cheese

You would be surprised how great the texture and flavor of the portobello mushrooms combines with the savory tomato sauce, the crisp veggie toppings and creamy vegan cheese. I wanted my topping to be crunchy and at the same time not to different in taste. Beets and carrots have long been a couple that is celebrated in many dishes. The subtle sweetness of this duo is a great fit for the tomato sauce and goes also super well with the nutty, sweet flavor of the almond cheese.

And the recipe is not even very difficult or time consuming...

For the portobello pizzas:

  • 4 portobello mushrooms
  • 1 carrot
  • 1 beetroot
  • 1 cup fresh spinach
  1. Grate the carrot and beet coarsely.
  2. Remove the stalks of the mushrooms.

For the tomato sauce:

  • 3 tomatoes
  • 1/2 cup dried tomatoes
  • 2 dates
  • 2 tbsp pine nuts
  • 1 small red onion
  • 1 garlic clove
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp paprika powder
  • optional: Pinch of chili powder
  1. Soak the dates in water over night, to make the blending easier.
  2. Throw all ingredients into your blender and mix until it becomes a homogenous sauce.

For the vegan feta cheese:

  • 1/2 cups almonds
  • 1/4 cup lemon juice
  • 1/2 cup water
  • 1 garlic clove
  1. After blending all ingredients, pour the mixture into a fresh towel (if available, you can use a nut bag) and press out the excessive liquid.
  2. Set the towel into a kitchen strainer and place a bowl beneath.
  3. Let it sit in your fridge overnight.

Now, it's time to layer everything and afterwards, be proud to have finished this tasty and healthy pizza creation! The best part about this kind of raw food - no inpatient waiting in front of the oven required, instead you can enjoy your pizza right after you’ve sprinkled the last piece of cheese on it.

Of course, this is not the average pizza you are used to and fell in love with in the past, but sometimes we want to be surprised by our dishes, we want to get excited about how they might taste. Stay open-minded about new ideas in the world of nutritious foods and don’t shy away from dished labeled as healthy stuff or you might miss out on something truly special.

Have a wonderful day and a fruitful journey ahead!

Great and delicious recipe!!!!

Thank you, Akasha! ☺️

What a great idea @rawadventuress - this could have been for the raw food week - but wow - what a lovely idea for a very different pizza

Thank you! Well, for me raw food week is every week 😁 But I am looking forward to creating something special for the raw food challenge, too 😉

What a refreshing change for pizzas, sounds really good!

Thank you, Lizelle! It truly is a special one, but pretty light on your stomach and still super tasty 😊

in Ukraine, such mushrooms have not seen, but really want to)

Yeah, they are pretty cool for such recipe creations - also for raw burgers, sandwiches and the like 😁 In Germany I rarely found them in some supermarkets with an especially big selection, here in Asia they are more common. Maybe you might get like some day in the Ukraine 😉

I can not look at these photos in the evening) is very appetizing) you are magical)

Yeah, it is hard to watch delicious food when you are not in a position to enjoy it yourself right now 🙈

Thank you so much, Inna 💚

Love love love this looks so gooood 🙌🏼😍😋

Thank you, Kristin ☺️🙏🏻

Hi @rawadventuress! Welcome and thank you for your entry! I really like how you made a modern raw vegan pizza. It is great to watch a food evolve over time. Even the cheesy and meaty pizza that we consider "traditional" is not really the start of the story. In ancient times they baked bread that was topped with fresh herbs. I guess pizza is coming full circle now and heading in a more healthful direction again!

I would like to try your vegan feta recipe. I can imagine how the garlic gives it a great flavor. I have not experimented very much with raw vegan cheeses so I am thankful that you are sharing that information with us. Your pizza looks very appetizing and I would love to try it!

I was wondering if you ever miss things about non-raw foods? Like a warm bowl of soup? Also, in case you do not know the theme this week at Cook with Us is Raw Foods. It would be awesome if you could share even more of your knowledge with us! Thanks for your entry!

Thank you so much for your comment, Steve! I didn't know that about pizza, well it seems to have evolved a lot over time and I love that there are so many different interpretation of this famous dish.

Vegan cheeses can be so simple and super easy to adapt to your taste preferences! I've also posted a raw cashew cream cheese recipe some time ago, if you are interested to check that out.

As long as I have access to great fruits and a delicious gourmet dish from time to time like raw lasagne, cheese or pizza I am not missing a thing. I know, that might be hard to understand if you have not yet experimented with such a lifestyle since at the first glance it seems like a life in scarcity, but it is truly such an enriching, rewarding and pleasurable way of living - a decision that has changed my life, big time. 💚

I might miss the warmth of some recipes if I were located in a cool climate, but since I am traveling only in warm places, this has not been the case. When I was living in Germany as a raw vegan last year and I was craving some more warmth, a comforting tea and gentle movements like yoga did the job just as satisfyingly.

Thanks for the heads up, I will definitely take part in this week's challenge and am already putting together my recipe ideas 😉

Welcome to Cook with Us @rawadventuress! You said it ... keep an open mind. There's a lot of delicious food that are also healthy. And deviating from the usual things we are used to eating may just open us up to other exciting food.

I know I would enjoy your vegan pizza. The different textures make it fun to eat and the flavors sounds delicious, especially with that sauce! Will try making your vegan cheese as I have made them before but the garlic must have added a nice flavor to it. It looks rich and thick!

Thanks for your wonderful entry @rawadventuress!

Thank you so much! So true, most of them time it is a very rewarding experience to try new foods - it absolutely outweighs the occasions when you discover you do not like a certain fruit or meal (which rarely happens to me to be honest 😄).

Yes, the garlic definitely does the job of adding some extra savory taste to the cheese. The consistency is pretty great for a cheese 😉

My pleasure, I am looking forward to taking part in this challenge more often - such a welcoming and inspiring community!

Glad to hear you are taking part in the challenge more often. You bring a lot to the community and it's very much appreciated!

Thank you for your kind words ☺️
