Some are, for sure! That's why I'm in my Rebel Canners groups on Facebook - so I know which ones can be broken.

So I made salsa the other day and wasn't really sure how to go about canning it. We had access to a ton of free tomatoes and I eat a lot of salsa which is expensive for a good one...so it made sense to try my hand at this. It turned out good, but didn't can any. Did freeze some instead, but want to figure out canning for sure for next year.

Salsa would be a ten minute water bath. BUT, you have to realize that when you cook the peppers, they get milder, so start with a bit hotter than you want your end product to be.
You might also check out lactofermenting the salsa.
Actually, there is a salsa-making session coming at some point. My husband is completely sold on it.
