Can you use Brinjals for Supper?

Yes, why?

Well, there are a few in the garden that want picking.

As happens when the weather turns, the menu changes. But in this case, that wasn't all. I am always looking for new vegetarian options for Sunday Suppers and I have been specifically looking for curry dishes that are more than just mixed vegetables.

I think I have found it: brinjal slices with a lentil and coconut dahl. The sauce is onion with fresh garlic and chopped chilli to your taste, tomatoes and then ground cumin, coriander and turmeric. To this, add a peeled, chopped tomato, red lentils and then some vegetable stock. Simmer until the lentils are soft and then add the coconut cream.

While this is cooking, fry the brinjals which you have already salted. Add the brinjal slices to the dahl. Serve in layers with fragrant rice and fresh coriander.

That sounds yummy! I'd never heard the name "brinjal" — we call it "eggplant" in the US, and I had heard the term "aubergine" used by folks from Europe. Trying to get a handle on all the South African words! 😁

Thanks, @thekittygirl. Actually, in South Africa it's known by all three of those names. I grew up with British parents and that's what they called it. :D
