Central restaurant

For the first time Peruvian restaurant Central was in the list of 50 Best Restaurants in 2013, taking the border 50th place.
And in 2016 was the best restaurant in South America and 4th in the world list, is located between Eleven Madison Park Daniel Hamm (3rd place) and Noma Rene Redzepi (5-m).

Thanks to the efforts of Virgilio Martinez, who has long been dubbed the locomotive gastronomy trend, cuisine of Peru has learned far beyond its borders.
At the heart of the restaurant's ideology is the concept of vertical ecosystems that change according to height.
Therefore, a tasting set of Cental-ingredients collected from -20 to +4 100 meters relative to sea level.
In the preparation of dishes using unique products assembled by a team of chefs during expeditions: Kushiro — edible cyanobacterium, arracacha (something of a cross between carrots and celery), fish caught in the Amazon, Coca leaves (!) and much more.
Even water is produced in the restaurant-it is purified by reverse osmosis, preserving useful elements.

At least that runs the kitchen is the wife of Virgilio Martinez, Pia Leon (Pía León).
