Today's Sustainable Feast in the Garden of Eden

It is another beautiful day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today, cooking over fire on our rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.

Today we made hand breaded chicken tenders, steamed sweet potatoes, cheesy broccoli, and garden salad!



Our dinner began with a great garden salad. We piled yellow squash, zucchini, red onion, mushrooms, peppers, and carrots on a bed of kale for everyone to help themselves to delicious, bright, raw veggies! We have lots of homemade vinegars to dress our salads, with unique flavors like grape-banana and cherry pomegranate! 



We steamed a huge pot of sweet potatoes! We eat these with almost every meal during sweet potato season. They are extremely abundant, highly nutritious, and of course delicious! Steaming them is a quick and easy way to make a large quantity for our large crew of almost 20 people. Most people went for a simple topping today of butter and salt. 



As another side, we lightly steamed broccoli and melted on handfuls of gruyere cheese. This is a classic that both children and adults love! 



For our main course, we rolled chicken tenderloin strips in panko bread crumbs and gave them a quick fry in hot oil. The temperature of the oil is important for getting a nice crispy crust - if it is not hot enough, the breading soaks up quite a lot of oil, resulting in a soggy and unappetizing chicken strip. If it is too hot, the chicken strip may burn on the outside before cooking all the way through.

Today's strips had a bit of satisfying crunch to the crust but the meat was tender and juicy! Some of the children like to pair them with ketchup for fun dipping. 



This was a wholesome, classic, satisfying feast with more than enough food for everyone!
