MISO AND SESAME GLAZED CAULIFLOWER STEAK
This dish is not just for veggies, it's for everyone! And what a great way to break up your classic meat-centric barbecue with a delicious miso and sesame glazed cauliflower steak. YUM!

Ingredients
For The Cauliflower Glaze
1 clove garlic
5 g fresh ginger
1 tbsp miso paste
1 tbsp light soy sauce
1 tbsp tahini
1 lemon
2 tbsp honey
100 g unsalted butter melted
2 large cauliflowers
To Finish
1 tbsp sesame seeds, toasted
2 spring onions, finely sliced
1 tbsp sesame oil
Step 1
PREHEAT THE BARBECUE
Preheat the barbecue (or a griddle pan). Get it really hot!
Step 2
PREPARE THE GLAZE
Mince the garlic and ginger to a paste and transfer to a bowl. Add the miso paste, soy sauce and tahini. Zest the lemon and add the zest and half of the juice to the bowl with the honey and the melted butter. Whisk everything together to combine. Slice the cauliflower into thick 2cm slices.
Step 3
COOK THE CAULIFLOWER
Brush the cauliflower slices with a little of the miso mixture and place them onto a medium heat over the grill. Cook for 15 minutes, turning every minute and brushing on more glaze to build up a dark salty, sweet crust.
Step 4
FINISH AND SERVE
When the cauliflower is cooked through and can just be pierced easily with a knife, transfer them to a big platter. Finish them off by scattering over the toasted sesame seeds, sliced spring onions and drizzling over the sesame oil. Serve hot! Makes 4 steaks
