Yerba Mate Tea Kombucha
There are many health benefits to yerba mate tea and it is revered in the tea world as an energy booster. Many who are sensitive to caffeine say that even though yerba mate is high in caffeine they don’t get the side effects like they might from coffee. It is an acquired taste for some. So if you are nervous about this recipe, make a half batch and cut every ingredient in half (except the SCOBY). Try this fun tea as a new base for your already delicious kombucha!
1cup cane sugar
1 cup Kombucha Starter
12cups filtered water
1/2cup Loose Yerba Mate Tea(Or you can use 6 yerba mate tea bags)
Instructions
Bring 12 cups of water to a boil.
Add sugar and dissolve.
Add yerba mate loose tea, or tea bags, to water and sugar mixture.
Turn off heat and let brew for at least 10-15 minutes. The longer you brew, the stronger the flavor.
Strain your tea, if necessary, into your brewing vessel. Let cool.
Once completely cool, add your kombucha starter liquid and SCOBY.
Cover with a thin cloth or a towel and rubber band to secure.
Let brew from 6-14 days. Houses warmer than 70 degrees will take less time than cooler houses.
When your kombucha is to your taste, you can drink right away or store in bottles* in the fridge.
