Startup Invents Eggless ‘Eggs’ That Look, Scramble & Taste Like The Real Deal

There’s no walking on eggshells when hosting parties for vegans and meat-eaters now. Hampton Creek has developed an incredibly alike scrambled egg substitute that looks, cooks, and tastes like the real deal.

Made from mung beans—4,000-year-old legumes—‘Just Scramble’ is a yellow liquid that fluffs up when poured in a pan to look like an actual egg.

“We certainly didn’t invent the mung bean or teach a single farmer how to grow it,” the San Francisco-based startup clarifies. “We were lucky enough to find something that has already impacted our food system for thousands of years and turn it into a meal that will impact it for thousands more.”

Its appearance and taste might already be enough to draw egg fanatics in, but what probably makes ‘Just Scramble’ even better than the real thing is that it’s free from cholesterol and antibiotics.

“It [tastes] pretty much like one would expect,” reports BuzzFeed News. “Fluffy yet dense, light, and chewy—although the clumps were perhaps a bit clumpier than a regular scramble.”

In addition to the product’s look-good-and-feel-good qualities, ‘Just Scramble’ is also environmentally-friendly.

These perks beckon a relatively high price, though. While regular eggs are priced at about US$1.05 a dozen, the egg-free version costs between US$4 and US$6 for the same amount.

“It’s not a product just for conscious consumers. It’s not a product just for people who care about the environment or animal welfare. It’s something for everyone,” says CEO Josh Tetrick.
