Are you able to calculate these amounts before a day begins, or do you not know the total rewards pool until the end of a given day, or the end of a 7-day period?

You can estimate it fairly accurately before a day begins, but you can't know the numbers for 100% sure until once it's done. At any time you can look up the amount in the rewards pool at steemd.com. Search the page for "reward_balance"; on large monitors it's on the far right about a page down.
Do you know how this is calculated directly from the blockchain? I'd like to build some analysis around it, similar to this post.
