Ingredientes:
- 1 kilo de yuca.
- 1 cucharada de sal
- Aceite o manteca para freír
- Para la guasacaca:
- 1 taza de aceite vegetal
- 3 mangos pintones
- 2 dientes de ajo
- 3 ajíes
- Una cucharadita de vinagre.
- Media taza de agua.
- Sal al gusto.
Preparación :
Paso 1
Pela la yuca, córtala en trozos y póngala al fuego en una olla con suficiente agua y una cucharada de sal, déjala hervir hasta que este blanda, escurre y deja reposar. Mientras esperas que la yuca se ablande puedes ir preparando la guasacaca.
Paso 2
Para la guasacaca: pela y ralla 2 o tres mangos (depende del tamaño) debes obtener alrededor de dos tazas de pulpa rayada.
Paso 3
Coloca en la licuadora (o en un procesador de alimentos) el ajo, el ají y la media cebolla con el agua y el vinagre, licua a velocidad media hasta que queden mezclados.
Paso 4
Agrega el mango de a poco y licua, otro poquito y licua, así hasta terminar, agrega una cucharadita de sal.
Paso 5
Con la licuadora encendida ve incorporando el aceite lentamente hasta que la mezcla se emulsione y tenga una textura cremosa como de mayonesa (entonces estará lista tu guasacaca)
Paso 6
Procede a cortar la yuca en trocitos alargados, procura retirar la vena que tiene en el centro y fríe en aceite caliente hasta que estén dorados.

Sírvela con la guasacaca y la bebida de tu preferencia. Yo la disfruté debajo de la mata de mango con el café de la tarde y estuvo deliciosa. Espero que se dispongan a preparar este fácil platillo o como decimos aquí en Venezuela este “pasapalito”

- 3 green mangoes
- 2 garlic cloves
- 3 peppers
- One teaspoon of vinegar.
- Half cup water.
- Salt to taste.
Preparation :
Step 1
Peel the yuca, cut it into pieces and put it on the fire in a pot with enough water and a tablespoon of salt, let it boil until soft, drain and let it rest. While you wait for the yucca to soften, you can prepare the guasacaca.
Step 2
For the guasacaca: peel and grate 2 or three mangoes (it depends on the size) you should get about two cups of striped pulp.
Step 3
Place the garlic, chili pepper and half onion with the water and vinegar in the blender (or in a food processor), blend at medium speed until mixed.
Step 4
Add the mango little by little and blend, another little bit and blend, until finished, add a teaspoon of salt.
Step 5
With the blender on, add the oil slowly until the mixture is emulsified and has a creamy texture like mayonnaise (then your guasacaca will be ready)
Step 6
Proceed to cut the yucca into elongated pieces, try to remove the vein in the center and fry in hot oil until golden brown.
Clever
Serve it with the guasacaca and the drink of your choice. I enjoyed it under the mango tree with the afternoon coffee and it was delicious. I hope you are ready to prepare this easy dish or as we say here in Venezuela this "pastry"
