In the steam toast of the other day, the position of the logo shifted a bit ...

It will be a revenge this time, but somehow it went well!

Also this morning, I tried placing banana, orange, pineapple outside the toast!

In my home, I try to eat 3 kinds of fruits as much as possible.

There are various reasons, but there are possibilities that a combination of new tastes will be born if all three types are complete!

Because you can enjoy marriage of various acidity and sweetness, it will be very learning! !

先日のスティームトーストでは、ロゴの位置が少しずれてしまいました・・・

今回はそのリベンジになりますが、なんとか上手くいきました！

また今朝は、トーストの外に、バナナ・オレンジ・パイナップルを配置してみました！

我が家では、果物は1回につき、できるだけ3種類は食べるようにしています。

色々理由はあるのですが、3種類が揃うと新しい味覚の組み合わせが生まれる可能性があるのですね！

様々な酸味や甘味のマリアージュが楽しめるので、とても勉強になるのです！！

★About Black Cocoa Powder★

Well, today's steem logo used "Black Cocoa Powder"!

Perhaps you may have heard the word black cocoa for the first time, but in the chocolate industry it will be a major raw material.

As an easy-to-understand example, it is black cocoa used in oreo cookie.

So I will tell you a little about the chemistry of cocoa today!

Originally, cocoa is acidic food.

Especially if you like high chakao chocolate, I think that you understand, cacao has originally sour taste!

This acidity is born by fermenting after harvesting cacao beans!

This fermentation is easy to understand such as wine and vinegar.

By the way, it might be better if there was sour taste if it was a plate chocolate, but when using it for drinks it is more likely to be delicious if there is no sour taste.

Therefore we do alkali treatment during the roasting process of cacao beans!

Alkali treatment is a process of adding an alkaline solution such as sodium or potassium.

By doing so, it changes from acidic to neutral and alkaline, so its acidity decreases and it turns into a drinkable raw material.

And black cocoa will be treated with this alkaline treatment to the limit!

As an image, alkali treatment is usually done once, but it is like touching it twice.

Because the alkaline liquid is contained more than usual, the taste is quite strong chemical odor.

However, no matter how much, the blackness of this color is overwhelming!

When I was in chocolate development era, when I needed to blacken the color of chocolate, I added a little black cocoa.

Actually, there are quite a few kinds due to differences in manufacturing methods and raw materials!

I would like to talk about that story again!

★ブラックココアについて★

さて、今日のsteemロゴは「ブラックココアパウダー」を使用しました！

もしかしたらブラックココアという単語を初めて聞いた方もいるかもしれませんが、チョコレート業界では割とメジャーな原材料になります。

分かりやすい例だと、オレオクッキーに使われているのがブラックココアになりますね。

そこで、今日はココアについての雑学を少しお話しますね！

そもそもなのですが、カカオは酸性の食品になります。

特にハイカカオのチョコレートが好きな方はお分かりかと思いますが、カカオには本来、酸味があります！

この酸味は、カカオ豆の収穫後に発酵をすることによって生まれます！

この発酵は、ワインやお酢とかが分かりやすい例ですね。

ところで、板チョコとかでしたら酸味があった方が良い場合もありますが、ドリンクに使うときは酸味がない場合の方が美味しい可能性が高いです。

そこでカカオ豆の焙煎工程の際に、アルカリ処理を行います！

アルカリ処理とは、ナトリウムやカリウムといったアルカリ液を加える工程になります。

こうすることによって、酸性から中性、アルカリ性に変化しますので、酸味が減って、飲みやすい原料に変化するのです。

そして、ブラックココアは、このアルカリ処理を限界まで施したものになります！

イメージとしては、アルカリ処理は通常1回行うのですが、それを2回繰り返した感じですね。

アルカリ液が通常より入っているので、味の方は薬品臭が結構強いですね。

しかし、なんといっても、この色の黒みは、圧倒的です！

私がチョコレートの開発時代だった頃は、チョコレートの色を黒くする必要があるときには、ブラックココアを少し加えていました。

ココアも実は、製法や原料の違いで、かなりの種類があるのですよ！

そのあたりの話は、また改めてしたいと思います！
