Hello everyone! Today I am going to share a cooking recipe of macaroni pasta using simple ingredients. Now that most of us are home during lockdown and we make minimal grocery trips, it is important to use our ingredients sparingly. Hence, my mother and I cooked macaroni with simple items and minimal special ingredients, unlike usual where we add more ingredients like mushrooms.

Ingredients

These are most of the ingredients that we used.

  • 9 cloves of garlic - crushed
  • 2 large red onions
  • 2 carrots
  • 2 tomatoes
  • Chopped cauliflower
  • 2 chillies
  • Minced chicken
  • Salt to taste
  • Oregano to taste
  • Thyme to taste
  • Macaroni
  • Prego pasta sauce in tomato flavour - 1 can
  • Cooking oil

Here's a closer look of the chopped ingredients, except for cauliflower.

Method

First of all, heat up the pan. Once it has heated up, pour some oil into it. Then, add the onions. Mix them well. Once you see the colour turning slightly brownish, add the garlic. Mix them with short breaks of a few seconds to allow them cook.

On a separate pot, pour some water and add in the macaroni. Add some salt as well as some oil. The salt gives some flavour to the pasta. Bring the mixture to a boil. It should soften and look like this. Some people say that we shouldn't add oil but we usually add oil and the pasta comes out just fine.

The softening of the macaroni does consume some time. So in the meantime, continue cooking by adding some chilli. Cook for about 30 seconds then add the minced chicken. try to separate the minced parts so they will be able to mix well with the other ingredients. Cook until they start turning brownish.

Then, add the tomatoes, cauliflower and carrots. Mix them well with intervals to allow them to cook. Add the pasta sauce and let all the ingredients simmer. Add some salt and any spices that you like. We added some oregano and thyme.

The macaroni will most probably be ready and soft by the time you are in the previous step. Since it involves some simmering, use the time to strain the macaroni out with a strainer like this.

Add the macaroni into the pan and mix everything together for 3 minutes.

Cover the pan with a lid for 2 minutes to let it cook in the trapped heat.

Take off the lid and give it a mix. Repeat the previous step if needed. We repeated it one more time. Macaroni is ready.

Serve it in a plate that is slightly deeper almost like a bowl as there is sauce in the dish. Enjoy the macaroni! It is best to eat it while it is still warm as that is when it tastes best =)
